So after a bit of dinking around with settings, I discovered that the Dropdown list for styles, in the Project Settings dialog box, does not show the new setting after it’s set. At first I thought it wasn’t actually setting it, but actually it is. In order to see the new setting in that box, I have to exit Scrivener and restart. This is annoying.
