Creating Labels

I recently watched a video on creating mobi and epub from Scrivener, and saw a tool I'd like to incorporate into my own efforts--color-coding for each site/story. So that I can use red [for example] on the 'Other Books by the Author' that links to and is sold as a Kindle book, and blue for Nook, etc.

But I can't figure out how to create the color code, naming each color for the store it will represent.

I also can't figure out how to add the color code. Using 'help' and the 'edit' panel I wasn't able to find out how to color-code individual text documents rather than folders.

Help, please? I have five books on various sites and this would be a nice tool to use.

Labels are covered in Chapter 10 on meta-data, in the user manual PDF. §10.1.1 (pg. 116) will cover how to set them up, with some tips on how labels can be used in the project interface on the following page.
