How do I remove a hyperlink from a file in the drafts folder on an iPad?

If I’m understanding you correctly, you want to remove the link but leave the address in place. I’m using iOS 12, but the process is likely the same in iOS 13.

First select the entirety of the link’s text. You can use your finger but in this case I used Scrivener’s selection tool. Place the cursor inside or at the link’s end then double tap the selection tool so as to *select all*. Press the selection so the black edit menu appears. Tap the righthand triangle to get to the Remove Links option.
