Why is there any text displayed in the folder although available:

You haven't written any text in the folder. If you had, the icon, which is visible in your screen shot, would display a small piece of paper in the bottom right corner.
If you're wanting to view the text files you have placed in your folder, you need to click on the scrivenings button. Of the three 'mode' buttons, which allow you to choose how you view your work (ie text, corkboard, outliner) it's the one on the left. When a folder is selected, this allows you to toggle between single file (just viewing the text you have written inside the folder) and multiple files (all the files you have placed in that folder known in the Scrivener world as 'scrivenings'). The button will go yellow when scrivenings mode is selected.
