I have a Mac using dual displays using "sidecar." Is there any way to separate out the Binder and Inspector windows and place them on one display and use the other display for the main text?

Sort of. You can use either Composition Mode or a Quick Reference pane for the main text, and put that view on the second display. But there's no way to split the main Scrivener window in pieces. See Section 17.3 in the manual for details.
