Is there any way to find the date when a project was created, in Scrivener for Mac?

The Finder has this info available for you. Select the project file in the Finder and invoke Get Info.

You can see the creation dates for individual documents in the Inspector's "tag" pane. That may or may not be a reliable indicator for the project as a whole.
