Is it possible to add a new scene, on-the-fly, in Full Screen Mode? Is there a shortcut key to do this? Or do I have to just write and separate/split at the end of my writing session?

Easy! Same way you create a new document in the rest of the interface, just press Cmd-N. It will be inserted below the one you were editing prior. As a side note, once you do this the prior document will be loaded into full screen mode's history. So if you want to easily get back and forth between the old and new document, use Cmd-[ and ].

Perfect. Thanks. I also figured out that you can do CMD-K to split scenes while in Full Screen.

That is correct; would have pointed that out too, but misread your original post and thought you were already doing that. :)
