No, it is not a typo. Scrivener will save after periods of inactivity. I'm sure even during your most productive moments you pause for 2 seconds briefly to ponder something or reconsider your wording which is when Scrivener saves. It might also depend on the browser you're using. I notice that in IE the refresh is as you want but in Chrome and Firefox you have to manually refresh.

You can change keyboard shortcuts in the Options menu.

Options -> Keyboard then find the appropriate options you want to change the shortcuts for. Currently the Save As shortcut is Ctrl + Shift + S.

In regards to the disappearing chapters, did they end up as subfolders of other chapters?

I haven't encountered the numbering issue before and will leave that to more knowledgeable people to answer.

You might try "Convert Formatting to Default Text Style." Documents -> Convert -> Formatting to Default Text Style.

Yes, the issues with tables is a known. It's been marked for fixing hopefully in the next release.

You can add Text Color and Highlight to the Toolbar by customizing it.

Tools -> Customize Toolbars, select Text Color/Highlight and move them over to the Toolbar with the arrows and arrange where you want them.

Did you completely uninstall the Trial version before you installed the release version?

There were some bugs in the beta versions that were ironed out for the release that might still be lingering if you're seeing the same issue.

Go to Tools -> Options -> Appearance then expand "Full Screen" under "Colors." That should allow you to change the colors you need.

To take care of the copy&paste issue, you can use "Paste and Match Style" which makes it match the settings in Scrivener. The keyboard shortcut is Ctrl+Shift+V. It's also in the right click menu. As for the ruler, it's under Format -> Show Ruler or the keyboard shortcut is Ctrl+Shift+R...

Yeah, those functions are a bit awkward currently. Someone on the team will need to pop on and say if that's to be smoothed out in a further release or if the current behavior is buggy.
