Time insert?

Hi,
I want to be able to insert the time without the date. Is there a way of doing this? Please treat me as if you were dealing with a very young child who is far from being computer literate :D
Any help, guidance, would be much appreciated.

Chapters in the binder

Hi,
I'm trying to add a new chapter in the binder but the green add button has disappeared. I've tried adding a folder but that doesn't do what I want. What am I doing wrong/not doing right?
Any help is much welcome. Thanks.
