Just FYI, if you go to Help | About Scrivener, it will show you the version number. This is true of all Windows programs.

It's v. 1.9.7.0 that came out in Oct. 2016, at least according to the "About Scrivener" item in my help menu.

You kind of answered your own question, unless there's a part of "users should refrain from testing out the beta if they're working with important files" you don't understand. :D

For the first part, try Documents | Convert | Formatting to Default Text Style.

FYI, the latest version for Windows (other than the Beta for Scrivener 3) is v. 1.9.7.

Set your default text style the way you want it, then Documents | Convert | Formatting to Default Text Style.

You're looking in the wrong place. Try Tools | Options | Corrections - you'll see all three versions there.
