Sopranos aired too late and too irregularly for me too.

The only mafia I have seen on TV comes from The Simpsons... but then so much of what my generation first saw on The Simpsons later turned out to be a reference to something much more famous.

I almost used the word "grass" for "snitch" at one point, but then I realised I had my TV shows crossed and that one came from Heartbeat and The Bill.

I've done it enough times that I would never suggest it was easy. In fact, for me, this one was harder than the others.

But what I can say is that it usually gets easier after the first two or three paragraphs once the panic has worn off.

I would assume dialog should sound authentic to the character, spelling should be British English. Although, I suspect that may not mean someone gets thrown in "gaol" instead of "jail".
