If you want to edit the built-in compile formats you always have to duplicate and then edit. That’s no bug

A project is the whole .scriv folder. If you move or copy a project, you need to handle the whole folder as a unit.
Backups are the same. If they are zipped you need to unpack the zip-file and then handle the whole .scriv folder that results.

Dropbox is the only cloud service the iOS version can use. If you only sync between Macs or PCs you can use any cloud service that syncs the same way,

How can hou see where the Dropbox sync is having problems? How are you monitoring the Dropbox app on your Mac?
Or are you referring to Sync with external folder?

Check your settings in Preferences -> Backup. Check if your setting is to backup on "close project" or on "open project". If you keep Scrivener running and seldom close your project there will be very few backups, unless you make manual backups or have ticked "backup on manu...

Use folders for the chapters and put the quotes directly in the folder text. That way you can give it its own format.

Have you done the interactive, built-in tutorial?
If not, go through it.
If you have, create a new project with the blank template and just start writing. Break your text in any number of sub-documents during the process. Structure and output format is a later issue. Just write.
