Have you done the interactive tutorial built into Scrivener? If not I suggest you start there to get a good understanding of the core principles of Scrivener. It’s nothing like Word, in any way. It’s built with a focus on writing, not on layout, and it’s not wysiwyg and hence not focused on images.

What you are showing is the horizontal positioning of the text within the Editor window, not the vertical centering of the cursor while writing.

You can change all that in the compile settings, so you don’t need to do it while writing. If you look at the compile settings there is a Title options tab, described in the manual section 24.2.4.

I use Notability and Numbers for this.
Import the assignments or tests into Notability, read and annotate (on the iPad) and have numbers open in split screen when it’s time to give points or grades.

Notability has become my go-to app for all sorts of reading and annotating.

You should use Compile, not export.
