You need to click the topmost level of the Binder, be in Scrivenings mode and then click in the Editor. That way the Editor is showing All and you can Select all.

Dropbox only saves the most recently changed files within the Scrivener folder structure. Yes, of course it does. The project .scriv is a folder with sub-folders and lots of files. Thank you. I actually watched the whole tutorial Katherine referred to the built-in interactive tutorial that you start from the Help menu in Scrivener. It’s a Scrivener project that walks you through all the basics in Scrivener. It takes some time to do it all but it is worth the time and effort.

Backups are by default saved as .zip
The live projects are .scriv

If you deleted all .zip it's likely you deleted all your backups, but not the .scriv files.
Are you using any kind of cloud service, that you also cleaned out?

You can have the projects you want to sync in any subfolder of the Dropbox folder that the Dropbox app creates on your HD when you install it on your Mac.

No, how the Binder titles are displayed in the Binder is setup under Tools -> Options, and it does not carry over to the compile settings. You have to define how the Binder titles should be included in the text when you decide how the layout should be. Binder titles are not part of the Editor text.

Is the Dropbox app running on the Mac?

Have you told iOS Scrivener where to look for the projects? You need to set it up, in iOS Scriv on the iPad. In the opening project screen, Edit, cog wheel at the bottom, Dropbox settings.

You didn’t by any chance make a Save As... at any point, saving with a new name after having created those documents but before actually filling them with text? And then by mistake later open the old version instead of the new one with the new name?
