Brilliant! That solved it. I was not even aware of that option, but somehow must have clicked on it inadvertently when viewing the Navigate menu and then somehow clicking on it. I tested it out and now working the way you would expect it to. Thanks for showing me that.
Bryan, that is the experience I have when just testing this out as it did not yet show my newly created Scrivener 3 project, but it did show one I had created new in Scrivener 3 and the opened by double clicking on it.
