Is it possible to use bullet-points/numbered lists in Scrivener? Sorry if it's obvious but I haven't been able to find it.

Press Cmd-R to display the Ruler, and then in the right most drop-down menu, you'll see a collection of bullet styles you can use. These will export as real lists to supported word processors.

Thanks. In Word, you can easily move indented and then out again by hitting tab to move forward or tab once and then quickly backspace a few times to move backward. I can't find any easy way to make the lists more or less indented as I go. Is there one?

Tab and Shift-Tab should do the trick.
